Description: Here's an odd one. French sake. Takuma Inagawa and Shoya Imai took their extensive knowledge of sake brewing and transplanted to France, using the terroir of Camargue to cultivate the japonica rice, the wild yeasts used to start the fermentations, and the local water, and of course French oak for aging. This is a very traditionally made sake with a delightful Francophile twist. Medium body, bright with a pleasant acidity. Yuzu, white flower and quince are at play. Dry with a lengthy melon/almond finish. Beautiful stuff.
