Description: Succes is a relatively recent project focused on growing and sourcing organic fruit from native varietals, vs the bulk Cava production that dominates the region. This Trepat comes from bush-trained vines. Already thin-skinned and light drinking, a 3 day maceration gives it just a touch of color with 8 months on the lees in stainless to age. Delicate, floral, woodsy, herbaceous, crispy and crunchy. Clocking a cool 11% ABV, throw a chill on this and take it to the dome from a brown paper bag.
