Description: Pares Balta is one of the larger natural style producers working in Penedes. All their wines come from biodynamic estate fruit from a variety of both indigenous and international varietals. In 2014 they discovered plantings of native Sumoll vines in the their vineyards. After reviving them, they decided to release a single varietal bottling, released only during the best vintages. Fermented in large glass (big carboys), it preserves the freshness of the bright red fruit while allowing the harsh tannic structure of the wine to resolve. Red fruit, earth, silty tannin, and vibrant acidity combine to create something both fresh and deep.
