Description: Pares Balta is one of the biggest growers and producers of organic and biodynamic wines in the region and this is their nod to crafting Champagne-quality wine. Chardonnay and Xarello are fermented separately in stainless steel with the Pinot spending 2 months on the lees. Secondary fermentation in the bottle where it rests on the lees for 7 years before disgorgement. Nutty, floral, orange peel, bready mousse, tight bubbles, and a hint of saline, this one knocks it out the park.
