Description: Since Didier took over the family estate, he has made it his mission to grow grapes and make wine with as little intervention as possible. Working in Faugeres, a standout AOC in the Languedoc, he has 14 ha of vines 40-70 years old on mostly schist soil that he has never chemically treated. This wine is Carignan-dominant, rounded out with Grenache and Cinsault and aged for 2 years in stainless and used oak, with no additions or subtractions. It is a deep, brooding, full bodied wine with seemless, silky tannin. The fruit is dark and rich, with loads of savory gaminess, garrigue, and mineral depth.
