Description: This is simply sake at it's most pure expression. No steps are skipped or expenses spared. The water, "Fushimi Mizu" is specially designated mountain water considered the highest quality in Kyoto. The Yamada Nishiki rice comes from a single renowned grower and polished to half its size. It doesn't see any dilution or fortification and the result is ethereally light, dry and absolutely precise. Wonderful honeydew, banana, a zip of anise are at play, and the spring-quality mineral content of the water tickles the palate just so. Everything is so subtly in balance that its subtlety is the thing that stands out the most. Pure elegance.
