Description: Ryan Stirm has been a prominent figure in the Central Coast, working directly with sustainable vineyards, making wines that speak directly to the sites they hail from. This year’s Calcite (a type of rock formation found in the valley) comes from 2 vineyards; Wirz provides the Riesling (70+% of the blend) and the rest is split between Chenin Blanc and Chardonnay from the Gimelli vineyard. The Riesling portion sees whole cluster maceration with direct press juice from the Chenin and Chard. The Chenin and Chard give lots of lush stone and tropical fruit to the crushed rock minerality and bright acidity of the Riesling.
