Description: Domaine Rolet has been making wine in the Jura since '42, and now under the direction of the 2nd generation, they are converting all their vineyards organic. This crémant is dominated by Chardonnay, but rounded out with the other major grapes of Jura from their vineyards in Arbois and Côtes du Jura. Aged in stainless with 24 months of lees contact, this is a bubbly that goes the distance with tightly packed bubbles, loads of fresh apple and pear, a touch of brioche, and a distinct chalkiness.
