Description:  Domaine Bernard Defaix is a 4th generation estate in Chablis now run by sons Sylvain and Didier. They employ organic practices in both the vineyard and cellar, relying on tilling to rejuvenate the soils and breaking out paraffin burners to keep Chablis' problematic frosts at bay. This entry level wine is coming from Chardonnay on clay and chalk soils. The ripeness of the vintage shows on the nose (baked apple, lemon curd) but there is a finely balanced layer of acidity to keep it in check. Up to a year on the lees adds plenty of texture and a touch of oak frames everything nicely and gives the wine impressive length.
